Basic Large Chunk Granola Recipe

This Basic Large Chunk Granola combines rolled oats with honey, brown sugar, and vanilla to create sweet, clustered granola with a chewy texture. Pressing the mixture firmly before baking helps form large chunks, making it suitable for snacking or as a topping for yogurt and desserts. Its straightforward ingredients and method offer a customizable base for adding nuts, dried fruit, or chocolate.

Description

The recipe mixes oats with vegetable oil, honey, light brown sugar, vanilla extract, and salt, which forms a sticky blend that binds the granola together. By packing the mixture firmly on a baking sheet and baking at a moderate temperature, large toasted chunks develop with chewy centers and crisp edges. This granola has a balanced sweetness and toasty flavor from the caramelized sugars.

After cooling, the granola breaks into substantial pieces by hand or with a spoon, making it easy to incorporate into breakfasts or snacks. The size and texture of the clusters distinguish it from loose granola, offering a hearty mouthfeel and satisfying crunch.

Since the base recipe is simple, adding chopped nuts, dried fruit, shredded coconut, or chocolate chunks tailors the flavor and texture to personal preference. The granola stores well in an airtight container at room temperature, preserving freshness and crunch.

  • 1/2 cup honey
  • 1/3 cup light brown sugar
  • 1 tbsp. vanilla extract
  • 1/2 tsp. salt
  • 5 cups rolled oats old fashioned

Instructions

  1. Preheat oven to 325 degrees F. Line a (11x17 inch) baking sheet with parchment paper.
  2. Add the oil, honey, brown sugar, vanilla, and salt to a large bowl. Whisk until sugar is dissolved and oil is well incorporated.

  5. Bake for 30 minutes, rotating the pan half way through cooking.
  6. Let the granola cool at room temperature for one hour.
  7. Use a small spoon to scoop up the granola off of the baking sheet. Use the spoon and your hands to break the granola into large chunks.
  8. Store at room temperature in a sealed container or zip top bag.

  • Press the oat mixture firmly into the baking pan to create large clusters before baking.
  • Allow the granola to cool completely before breaking it into chunks to preserve the texture.
  • Store in an airtight container at room temperature to maintain freshness for several weeks.
  • Adjust sweetness by varying the amount of honey or brown sugar according to taste preferences.
