Basic Mustard Vinaigrette

This Basic Mustard Vinaigrette blends balsamic vinegar, crushed garlic, Dijon mustard, olive oil, dried parsley, thyme, salt, and pepper to create a tangy and flavorful salad dressing. The combination offers a balanced sharpness from the mustard and vinegar complemented by herbal notes and a smooth olive oil mouthfeel.

Description

The vinaigrette starts by mixing balsamic vinegar, crushed garlic, and Dijon mustard to form a flavorful base. Olive oil is gradually whisked in to emulsify the mixture, resulting in a smooth, slightly thickened dressing. Dried parsley and thyme add subtle herbal undertones, while salt and black pepper season the dressing to taste.

The final dressing offers a sweet and tart character from the balsamic vinegar, with a tangy sharpness provided by the mustard. The crushed garlic enhances the overall aroma and flavor profile without overwhelming the blend. This vinaigrette is versatile for green salads and can be adapted by substituting honey mustard for a sweeter taste or by changing vinegar types.

Adjusting herbs and adding crushed red pepper can alter the flavor profile to suit different preferences. The balance between acidity, oiliness, and seasoning makes this vinaigrette a simple yet effective complement to fresh vegetables.

Ingredients

Servings
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic crushed
  • 1 teaspoon Dijon mustard
  • 5 tablespoons olive oil
  • ¼ teaspoon parsley dried
  • ¼ teaspoon thyme dried
  • salt
  • black pepper

Instructions

  1. In a clean jar or small bowl, add the vinegar, garlic, mustard and mix well.
  2. Slowly add the olive oil while either whisking or stirring rapidly with your fork.
  3. Add the parsley and thyme, salt and pepper, taste and adjust seasonings.

Notes

  • Balsamic vinegar creates a sweet and tart flavor that defines this vinaigrette's taste.
  • For a sweeter version, substitute Dijon mustard with honey mustard and balsamic vinegar with apple cider vinegar plus a little honey.
  • Italian seasoning can replace parsley and thyme for a different herbal profile.
  • Add crushed red pepper for a subtle spicy kick in the dressing.
