Basic Quiche Recipe (Any Flavor!)
Description
The quiche starts by pre-baking a 9-inch pie crust to prevent sogginess. A custard mixture is made by whisking together eggs, milk, cream, salt, and pepper, then folding in shredded cheese. Cooked add-ins such as bacon, ham, or sautéed onions and vegetables are evenly layered in the crust before pouring the custard over them. Baking at a moderate temperature sets the filling until a knife inserted comes out clean, ensuring a tender yet firm texture.
The resulting quiche offers a rich, creamy interior with the savory flavor of cheese and choice add-ins balanced by the flaky crust. It can be served warm or at room temperature, making it flexible for meal occasions. Adjusting add-ins allows this base to accommodate a variety of flavors and dietary preferences.
Variations include cooked sausage, spinach, broccoli, asparagus, mushrooms, or shallots in the filling. The custard ratio ensures a custardy but sliceable texture, while partially baking the crust avoids a soggy bottom. Cooling slightly before slicing helps retain shape.
Ingredients
Basic Quiche Base
- 1 (9-inch) pie crust homemade or store bought, unbaked
- 4 large egg
- 1 cup milk
- 1 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cheese gruyere, mozzarella, cheddar, provolone, or feta, shredded
Add Ins
- 1/2 cup Bacon cooked and crumbled
- 1/2 cup ham diced
- 1/2 cup onion or onion, or shallot; sautéed; diced
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the pie crust into a 12-inch circle and place it into a 9-inch pie plate. Crimp or pinch the edges as desired. Use a fork to prick holes in the bottom of the crust. Place a sheet of parchment paper inside the crust and fill with pie weights or dried beans. This will prevent the pie crust from sliding or bubbling
- Bake for 10 minutes. Remove from the oven and let cool slightly. Reduce the oven temperature to 350°F (175°C).
- In a medium mixing bowl, whisk together 4 large eggs, 1 cup milk, 1 cup heavy cream, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until smooth. Stir in 1 cup shredded cheese.
- Spread 1 1/2 cups of desired add-ins evenly over the bottom of the par-baked crust. Pour the egg mixture on top.
- Bake at 350°F (175°C) for 40–45 minutes, or until the center is set and a knife inserted in the middle comes out clean. Let cool for 5–10 minutes before slicing and serving.
Notes
- Cook and crumble bacon before adding to the quiche, or substitute with diced ham or cooked ground sausage.
- Sauté onions or shallots before adding for milder flavor and better texture.
- Vegetables like spinach, broccoli, asparagus, or mushrooms should be cooked and drained to avoid excess moisture.
- Let the quiche cool for 5-10 minutes before slicing to help it set properly.
