Description

The cake batter starts with cake flour, sugar, baking soda, and salt creamed with softened butter until crumbly, then eggs, vanilla extract, and buttermilk are beaten in until light and fluffy. This creates a tender but structured crumb supporting the thick topping.

The crumb topping consists of granulated and dark brown sugars mixed with ground cinnamon, salt, and melted butter, combined with cake flour to form a dough ball. This dough is broken into marble-sized pieces and evenly placed on top of the cake batter before baking. As the cake bakes at 325°F for 35 to 40 minutes, the topping crisps and browns, creating a signature texture difference from the soft cake below.

Cake:

  • 1 1/4 cups cake flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons butter 3/4 stick, cut into small pieces, softened, unsalted
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoon vanilla extract
  • 1/3 cup buttermilk

Crumb Topping:

  • 1/3 cup sugar
  • 1/3 cup dark brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 8 tablespoons butter 1 stick, melted and still warm, unsalted
  • 1 3/4 cups cake flour

Additional:

  • powdered sugar , for garnish

Instructions

Crumb Topping:

  1. Add sugar, dark brown sugar, cinnamon, salt and butter into a bowl.
  2. Whisk together and add in cake flour until combined. Form into a dough ball.
  3. Let sit until you are done making the cake.

Cake:

  1. Preheat oven to 325 degrees.
  2. Use baking spray or butter and flour a square 8x8 pan.
  3. In a stand mixer, add flour, sugar, baking soda, and salt
  4. On low speed, add butter in pieces.
  5. Mix for 1-2 minutes, or until you no longer see the butter and the mixture looks like a crumble.
  6. Add in your remaining cake ingredients, egg, egg yolk, vanilla, and buttermilk
  7. Mix until light and fluffy, another 1-2 minutes.
  8. Pour and spread cake batter into greased baking pan.
  9. Take the topping dough and break apart into chunks about the size of marbles over the dough in a uniform pattern.
  10. Bake for 35 to 40 minutes, or until a knife is inserted and comes out clean.
  11. Let cool, then dust with powdered sugar.

Notes

  • Use softened unsalted butter for both cake and topping for better texture control.
  • Break crumb topping into small marble-sized chunks rather than sprinkling finely.
