  • 2 tbsp extra virgin olive oil Bertolli Organic
  • 1 cup Kumquat sliced
  • 1 red onion sliced into wedges
  • 1 tsp basil dried
  • salt
  • black pepper
  • basil for garnish, fresh

Instructions

  1. Preheat your oven to 400 degrees fahrenheit.
  2. Place the chicken thighs, sliced kumquats and red onion in a cast iron or oven safe dish and drizzle with olive oil. Use your fingers to ensure eveything is coated in oil, including both sides of the chicken. Then, place the kumquats and red onion around the chicken.
  3. Sprinkle the chicken with the dried basil, salt and pepper. Cook for 40-50 minutes or until cooked through.
  4. If you'd like the top of the chicken more golden, turn the top broiler on for the last 5 minutes of cooking.

Notes

  • A cast iron pan is ideal for even heat and great cooking results in this recipe.
  • For a golden, slightly crispy skin, broil the chicken for the last 5 minutes of cooking.
