  • 2 Tbsp red wine vinegar
  • 1 Tbsp honey
  • 2 tsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 10 medium to large fresh basil divided, leaves
  • 1/2 cup extra virgin olive oil

Instructions

  1. Add shallot, red wine vinegar, honey, mustard, salt, pepper, half the basil leaves, and olive oil to a food processor or blender.
  2. Process/blend until well combined.
  3. Pour into mason jar or other salad dressing container.
  4. Finely mince the remaining half of the basil leaves, then stir into salad dressing.
  5. Store in the refrigerator for up to a week, or serve over your choice of salad.

Notes

  • The recipe produces about 3/4 to 1 cup of dressing, which can be divided into servings as needed.
  • Adding half the basil during blending and stirring in the rest at the end preserves vibrant green flecks and fresh basil flavor.
