Batata Harra

Batata harra (بطاطا حارة), literally "spicy potatoes", is the name of a Lebanese dish that is very popular throughout the Middle East, and often eaten as a mezze or appetizer.

Ingredients

Servings

For the potatoes

  • 2 lbs floury potato , peeled and diced
  • 3 tablespoons olive oil (or neutral vegetable oil), for frying

For the sauce

  • 6 cloves garlic (preferably smoked), chopped
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • ½ teaspoon ground coriander
  • ½ bunch flat-leaf parsley , finely chopped
  • ½ bunch cilantro (coriander), finely chopped
  • 6 tablespoons olive oil
  • 2 lemon freshly squeezed, plural
  • salt
  • 1 teaspoon Aleppo pepper
  • ½ teaspoon black pepper or white pepper

Instructions

Potatoes

Cooking in a pan

  1. Dry the diced potatoes thoroughly with a cloth.
  2. In a wok or skillet, heat the olive or vegetable oil over a medium heat.
  3. Add the potatoes and sauté until cooked through, golden and crisp, stirring regularly during cooking.

Roasting

  1. Preheat the oven to 465 F (240°C).
  2. Place the diced potatoes into a large bowl.
  3. Drizzle with olive or vegetable oil and salt, and coat them by hand.
  4. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 40 minutes or until the surface is golden and crisp.
  6. Remove the baking sheet from the oven and set aside.

Sauce

  1. While the potatoes cook, prepare the sauce.
  2. In a large bowl mix the spices (cumin, paprika, coriander, Aleppo, pepper), then set aside..
  3. Heat the olive oil in a small pan over medium heat and brown the garlic, for about 50 seconds, stirring constantly.
  4. Remove the pan from the heat and add the reserved spice blend and stir well for 1 minute.
  5. Pour the mixture from the pan over the cooked potatoes and mix everything together to soak up the flavors, and completely cover the diced potatoes.
  6. Sprinkle with salt, parsley and fresh cilantro, and mix again.
  7. Serve hot, drizzled with lemon juice.
