BBQ Baked Country Style Pork Ribs Recipe

These BBQ baked country style pork ribs combine a flavorful dry rub and a rich homemade barbecue sauce made from ketchup, sherry, and spices. The ribs are browned on all sides for a golden crust and then slow-baked with onions and BBQ sauce to tender, juicy perfection. The bone-in ribs add moisture and enhance the sauce's thickness while baking. This recipe suits cooks looking to make tender ribs with a deep barbecue flavor in the oven.

Description

The BBQ Baked Country Style Pork Ribs Recipe starts by seasoning bone-in country style pork ribs with salt, pepper, and a light dusting of flour. The ribs are carefully browned in oil over medium heat to develop a golden crust on all sides, which adds texture and caramelized flavor. A homemade BBQ sauce is prepared using ketchup, water, sugar, dry sherry, vinegar, soy sauce, Worcestershire sauce, garlic, salt, paprika, and chili powder, creating a balanced and tangy sauce base.

After browning, the ribs are arranged snugly in a Dutch oven or similar ovenproof dish with sliced onions and the prepared BBQ sauce poured over. The dish is baked slowly at moderate temperature (325°F), allowing the meat to become tender and the sauce to thicken while infusing the ribs with savory and sweet flavors.

This dish works well when prepared ahead of time and refrigerated, as the flavors meld and deepen. To reheat, the ribs should be warmed covered at 350°F until heated through, maintaining their tenderness. The ribs make a hearty main meal with a balance of rich meat and flavorful sauce enhanced by the cooking technique and the inclusion of bone-in ribs.

Ingredients

Servings

For Browning the Ribs:

  • 5 pounds country style pork ribs bone-in
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • ¼ cup all-purpose flour
  • 2 tablespoons canola oil
  • 2 medium onion sliced ⅜" thick, yellow

For the BBQ Sauce:

  • ¾ cup ketchup
  • ¾ cup water
  • ½ cup granulated sugar
  • cup dry sherry wine
  • 2 tablespoons apple cider vinegar
  • 1 ½ tablespoons soy sauce
  • 1 ½ tablespoons Worcestershire sauce
  • 2 cloves garlic , pressed or minced
  • 1 teaspoon kosher salt
  • ¾ teaspoon paprika
  • ¾ teaspoon chili powder

Instructions

  1. Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
  2. Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
  3. Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
  4. While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
  5. Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
  6. Cover tightly with the lid and bake for 1 ½ to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
  7. Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

Notes

  • Use bone-in country style ribs to maintain tenderness and enhance bbq sauce flavor during baking.
  • Cooking the ribs the day before and refrigerating improves the flavor and allows convenient reheating.
  • To reheat, cover the ribs and bake at 350°F for 20-30 minutes until warmed through.
