Description
The BBQ Chicken Flat Bread Pizza combines a store-bought large or two medium flatbread crusts with cooked chicken breasts that are seasoned with garlic powder, chili powder, salt, and pepper for added depth. The chicken is cooked thoroughly on the stovetop before being chopped and mixed with a blend of two types of barbecue sauces delivering hickory and chipotle sweetness and smokiness.
The flatbread is spread with the barbecue sauce mixture, sprinkled with Mexican blend cheese and thinly sliced red onions, then topped with the chopped chicken. Cilantro adds a fresh contrast. Baking in a 400-degree oven melts the cheese and crisps the edges slightly, creating a layered texture of crispy crust, melty cheese, and tender chicken.
This pizza pairs well as a hearty lunch, dinner, or casual party dish. The optional addition of pickled jalapeños offers a tempered heat that balances the sweet barbecue sauce. Serve sliced for sharing or individual meals.
Ingredients
- 1 large flatbread pizza crust OR 2 medium flat breads, store-bought
- ½ teaspoon garlic powder
- ¼ teaspoon chili powder
- salt to taste
- black pepper to taste
- 2 chicken breast pounded to ½ inch thickness
- ½ barbecue sauce I used a hickory flavor, and a sweet chipotle version, each of two different
- 1 cup Mexican blend cheese shredded
- ¼ cup red onion thinly sliced
- ¼ cup cilantro roughly chopped
Instructions
- Preheat oven to 400 degrees and spray a baking sheet with cooking spray.
- Season chicken breasts on both sides with garlic powder, chili powder, salt and pepper. Cook over medium heat 5-6 minutes on each side until cooked through and juices run clear. Remove from heat and chop chicken into bite size pieces.
- In a small bowl whisk together bbq sauces. Spread sauce over flat bread. Sprinkle with cheese and then with onions. Top with chicken and finish by sprinkling the cilantro over the whole pizza. Bake 10-12 minutes until cheese is melted and starts to brown slightly. Slice and serve.
Notes
- Including sliced jarred jalapeños can add mild heat and extra flavor without overpowering the pizza.
