BBQ Chicken Flatbread

This flatbread is so quick to prepare and can easily be made with leftover chicken instead of starting from scratch! The combo of cheese, chicken, and BBQ sauce pairs perfectly on the soft crust!

Ingredients

  • 2 small chicken breasts or 1 large
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 1 tablespoon olive oil
  • 2 flatbread crusts
  • 1/2 cup barbecue sauce more for topping
  • 2 cups shredded Colby jack cheese
  • ¼ cup Thinly sliced red onion
  • ¼ cup chopped cilantro

Instructions

  1. Pound the chicken breasts to an even thickness.
  2. Stir together the garlic powder, onion powder, chili powder, and salt and pepper in a small dish.
  3. Season both sides of the chicken with the seasoning blend.
  4. Heat a large skillet over medium heat and add the oil. Once hot, add the chicken and cook for 5 minutes on each side or until cooked through.
  5. Remove the chicken and dice into small pieces.
  6. While the chicken is cooking, preheat the oven to 400 degrees.
  7. Spread each of the flatbreads with barbecue sauce and top with the cheese.
  8. Arrange the chicken and onion slices over the cheese.
  9. Bake for 10-15 minutes, or until cheese is hot and bubbly.
  10. Drizzle with additional BBQ sauce and sprinkle with cilantro before slicing into wedges and serving.

Notes

  • We use Stonefire flatbreads, easily found in many grocery stores. They're around 12 inches long by 6 inches wide. Naan or pita bread also work well, though you may need more as they'll be smaller.
  • Leftover chicken may be used in place of the freshly cooked.
  • To add spice, arrange sliced jalapenos (fresh or pickled, depending on how spicy you like things) over the flatbread before baking.
