BBQ Chicken Pizza
Description
This BBQ Chicken Pizza begins by seasoning a boneless chicken breast with smoked paprika, garlic powder, salt, and pepper. The chicken is cooked over medium heat until fully cooked, then chopped into small pieces and mixed with barbecue sauce to infuse flavor and moisture. The pizza is assembled by spreading BBQ sauce on a prepared dough or crust, layering shredded Monterey jack cheese, sauced chicken, sliced jalapeños, and red onions.
Baking the assembled pizza at 450°F until the crust is golden and cheese melted creates a balance of textures, with a tender chicken topping complemented by melted cheese and the occasional bite of fresh jalapeño and onion. The smoked paprika and garlic powder seasoning adds depth alongside the tangy and sweet sauce. Variations include using different BBQ sauces, pre-cooked chicken, or crust types such as thin crust, French bread, or gluten-free alternatives.
This pizza serves well sliced into eight pieces, making it suitable for sharing or serving as a casual meal. The notes suggest personalizing the BBQ sauce to adjust sweetness, spiciness, or smoky flavor, providing flexibility to cater to taste preferences.
Ingredients
Quick BBQ Chicken*
- 1 chicken breast $1.33, boneless, skinless, about 2/3 lb
- ½ tsp smoked paprika $0.05
- ¼ tsp garlic powder $0.02
- ⅛ tsp salt $0.02
- ⅛ tsp black pepper $0.02
- ½ Tbsp neutral cooking oil $0.04, generic cooking oil
- ¼ cup barbecue sauce $0.16
Pizza
- 1 pizza dough $0.62, prepared
- ½ cup BBQ sauce $0.32
- 4 oz. Monterey jack cheese $0.98, shredded
- 1 jalapeño $0.33, optional, sliced
- ¼ cup red onion $0.11, sliced
Instructions
- In a small bowl, combine the smoked paprika, garlic powder, salt, and pepper. Season both sides of the chicken breast with the spices.
- Heat a skillet over medium. Add the cooking oil and swirl to coat the surface of the skillet. Add the seasoned chicken breast and cook for about 5-7 minutes on each side, or until cooked through (internal temperature of 165ºF). Transfer the chicken to a clean cutting board.
- Let the chicken rest for about 5 minutes, then chop into small pieces. Add ¼ cup BBQ sauce to the chopped chicken, and stir to coat the chicken in the sauce.
- Preheat the oven to 450ºF. Place the prepared pizza dough or crust on a pizza pan, then spread about ½ cup BBQ sauce over the surface.
- Add the cheese, BBQ chicken, sliced jalapeños, and sliced onion to the pizza.
- Bake the pizza for 10-12 minutes, or until the crust and cheese are golden brown. Slice into 8 pieces and serve.
Notes
- Pre-cooked chicken like rotisserie or canned chicken can replace fresh chicken for convenience.
- Choose any BBQ sauce you prefer, with smoky or spicy varieties enhancing flavor.
- Use any pizza dough or crust, including homemade, thin and crispy, or store-bought gluten-free crusts.
- The toppings suit a 14-16 inch pizza crust and can be adjusted in quantity accordingly.
