BBQ Chicken Salad

Report
BBQ Chicken Salad combines smoky barbecue chicken with fresh romaine, sweet corn, avocado, and crunchy homemade tortilla strips. The diced chicken is cooked with barbecue sauce, then layered on a bed of lettuce, vegetables, and topped with cheddar cheese and ranch dressing. The mix delivers a balance of textures from creamy avocado to crisp tortilla strips, making it an inviting choice for a filling lunch or light dinner.

Description

BBQ Chicken Salad features diced chicken breast cooked and mixed with barbecue sauce, lending a smoky and tangy flavor throughout. The salad base includes romaine lettuce, additional lettuce leaves, sweetcorn, diced carrot, avocado, and cherry tomatoes, creating a refreshing and colorful blend of vegetables. Homemade crispy tortilla strips add texture alongside grated cheddar cheese. A drizzle of ranch dressing and a squeeze of lime juice bring a creamy and zesty finish to the dish.

Preparation involves grilling or pan-frying the chicken before combining all salad ingredients. The tortilla strips are baked to crispness, enhancing the salad with a crunchy component. This dish works well as a standalone meal due to the protein from the chicken and the variety of fresh vegetables.

For convenience, you can substitute store-bought tortilla chips instead of baking strips, or use croutons. Grilling fresh corn instead of canned provides added flavor if desired. The salad is flexible for different barbecue sauces, allowing you to tailor the flavor strength.

  • 8 tablespoon barbecue sauce
  • 1 romaine lettuce chopped
  • 2 handfuls lettuce leaves
  • 80 g sweetcorn canned; drained

  • 0.5 avocado diced
  • 8 cherry tomato diced
  • 4 tablespoon ranch dressing
  • 1 lime juice
  • 30 g cheddar cheese grated

Instructions

  1. Preheat your oven to 180°C/350°F/Gas 4.
  2. Slice 2 Mini flour tortillas into thin strips and then spray 6 pumps Spray oil. Put into the oven for 3-4 minutes, until crispy.
  3. Heat 1 teaspoon Olive oil in a large frying pan. Add 1 Chicken breast and cook for 5-6 minutes, until the chicken is cooked through. Keeping on a low heat, stir in the 8 tablespoon Barbecue sauce and then take off the heat.
  4. Add 1 Romaine lettuce and 2 handfuls Lettuce leaves to a large serving bowl and squeeze juice of 1 Lime over it. Top with 0.5 Avocado, 8 Cherry tomatoes, 80 g Sweetcorn and 2 Carrot. Top with the BBQ chicken.

  6. Drizzle with 4 tablespoon Ranch dressing and serve.

Notes

  • Opt for homemade BBQ sauce for richer flavor, but store-bought works fine for convenience.
  • Grilled fresh corn adds more flavor than canned sweetcorn when available.
  • Store-bought tortilla chips can replace baked tortilla strips for a quicker prep.
  • Croutons are a good alternative to tortilla strips if preferred.
