BBQ Chicken Skewers
Description
This recipe combines boneless chicken breast cubes and chunky pieces of bell peppers and onion, threaded onto skewers for grilling. The chicken is rubbed with a BBQ seasoning blend featuring chili powder, paprika, garlic powder, cumin, brown sugar, and a touch of cayenne for heat. This blend brings rich smoky and slightly sweet flavors while the chili and cayenne impart warmth without overwhelming the palate.
Soaking wooden skewers ensures they do not burn during cooking. The skewers cook on a preheated 400ºF grill, brushed with olive oil to help caramelize and prevent sticking. Turning the skewers occasionally assures even cooking until the chicken reaches 165ºF internally, resulting in juicy pieces contrasted with tender-crisp vegetables.
These skewers can be served immediately as a main dish or alongside rice or salad. The spice level is adjustable by reducing cayenne or omitting brown sugar to lessen sweetness. The recipe notes that using alternatives like coconut sugar or omitting sugar altogether are options for sugar-conscious eaters.
Ingredients
BBQ Chicken Seasoning:
- ¼ cup chili powder
- 1 tablespoon paprika
- 1/2 teaspoon thyme ground
- 2 teaspoon salt
- 2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1/4 teaspoon cayenne pepper (or less for a milder flavor)
- 1 tablespoon brown sugar **
- 2 chicken breast cut into cubes, boneless
For the skewers:
- 3 green pepper cut into thick pieces
- 3 red bell pepper cut into thick pieces
- 1 onion cut into thick pieces, large
- 10-12 skewers (soaked for at least 30 minutes)
For grilling:
- 2 tablespoons olive oil
Instructions
- If you are using wooden skewers, it is important to soak them first. You can soak them overnight or at least 30 minutes before making the kebabs.
- In a small bowl mix together BBQ seasonings.
- Season chicken with BBQ seasonings. Let the mixture sit for 10 minutes.
- To a skewer, rotate adding in chicken, peppers, and onions, repeat until the skewers have been filled about 1/2 way (about 3-4 pieces of each).
- Preheat a grill to 400º Fahrenheit.
- Add skewers to the grill and cook for 10-15 minutes, brushing with olive oil several times during grilling. Turn the skewers occasionally and grill until temperature reaches 165ºF internally.
- Serve warm.
Notes
- Soak wooden skewers for at least 30 minutes to prevent burning during grilling.
- Adjust the amount of cayenne pepper to control the heat level in the seasoning.
- Brown sugar can be substituted with coconut sugar or omitted to reduce sugar content.
- Turn skewers occasionally and brush with olive oil for even cooking and caramelization.
