BBQ Chicken Sliders

BBQ Chicken Sliders layer shredded rotisserie chicken tossed in BBQ sauce on slider buns, topped with cheddar cheese, red onions, and ranch coleslaw. The sliders combine smoky, tangy chicken with creamy, crisp coleslaw and soft toasted buns brushed with garlic butter. Melted cheddar adds richness, creating a handheld sandwich that blends savory and fresh textures and flavors.

Description

This recipe calls for assembling sliders by spreading BBQ sauced shredded chicken on the bottom halves of slider buns, then layering sliced red onions and cheddar cheese. The top halves are brushed with a garlic butter and parsley mixture and toasted until golden and the cheese melts. Prepared coleslaw mixed with ranch dressing is added over the cheese before the bun tops complete the slider.

The result is a slider with tender, flavorful chicken, sharp cheese, and crunchy, creamy coleslaw for contrast. The garlic butter on the toasted top buns adds an aromatic richness and slight crispness, while the BBQ sauce provides smoky sweetness. This combination makes the sliders suitable for casual meals or gatherings that benefit from easily handled portions with complementary textures.

Storage and reheating instructions are included, recommending oven warming to maintain bread texture and cheese melt. Sliders can be made ahead without the coleslaw and garlic butter, which are added fresh before serving to preserve quality. Freezing is not advised with coleslaw, but possible if it is removed first.

Ingredients

Servings
  • 12 slider buns (or dinner rolls)
  • 3 cups rotisserie chicken (shredded, or leftover shredded cooked chicken)
  • ¾ cup BBQ sauce (homemade or store bought)
  • ½ red onion (thinly sliced)
  • 4-6 lices cheddar cheese (or ½ cup shredded cheddar cheese)
  • 2 tablespoon butter
  • 1 clove garlic (minced)
  • 1 teaspoon parsley (dried or fresh)
  • 2 cups coleslaw premixed bagged
  • ½ cup ranch dressing

Instructions

  1. Preheat oven to 350°F. Line a large sheet pan (or 2 half sheet pans) with parchment paper or foil for easy clean up.
  2. Cut the slider buns in half. Place the bottoms and the top buns side by side on the sheet pan (or place the bottoms on one prepared pan and place the tops on the second pan).
  3. In a large bowl, mix the shredded chicken and BBQ sauce until evenly coated. Spread the chicken evenly over the bottoms buns.
  4. Scatter the sliced red onions over the BBQ chicken and top with the slices of cheddar cheese.
  5. Melt the butter in a small bowl and stir in the garlic and parsley.
  6. Brush the garlic butter on the top buns.
  7. Place the baking tray in the oven and bake for about 3-5 minutes, or until the cheese is melted and the top buns are toasted.
  8. In a large bowl combine the coleslaw and ranch dressing. Mix until evenly combined.
  9. Remove the trays from the oven. Evenly distribute the coleslaw over the melted cheese. Place the toasted top buns on top.
  10. Cut into individual sliders, or pull apart and serve immediately. Enjoy!

Notes

  • Reheat sliders in a 350°F oven covered for 5-8 minutes, then uncovered for 2-3 minutes to crisp buns and melt cheese.
  • Sliders can be microwaved briefly but oven reheating better preserves texture.
  • Store assembled sliders without coleslaw and garlic butter in the fridge up to 2 days; add these just before warming and serving.
  • Freezing is not recommended with coleslaw; it can be removed to freeze sliders for up to 3 months.
