BBQ Chicken, Sweet Potatoes & Broccoli
Description
BBQ Chicken, Sweet Potatoes & Broccoli starts with marinating chicken in a mixture of BBQ sauce, honey, salt, and pepper. The sweet potatoes are sautéed in olive oil until tender and nearly cooked through. Garlic is added then the chicken and marinade join the skillet, cooking together to create a flavorful coating. Broccoli tops the mix, sprinkled with salt, and cooks covered on low heat to steam until crisp-tender.
The dish balances the sweetness of sweet potatoes and honey with the tangy BBQ sauce and savory chicken. The broccoli adds freshness and slight crunch to the medley, making it a complete meal. It is suitable for weekday dinners and can be garnished with cilantro or green onions for extra brightness.
You can prep the components ahead by chopping vegetables and marinating chicken up to several days in advance. Leftovers keep well refrigerated for 3-4 days and can be reheated in a skillet or microwave. For longer storage, freeze in airtight containers for up to 4-6 months.
Ingredients
- 1 lb. chicken breast cut into 1-inch cubes
- ⅓ cup BBQ sauce
- 1 Tbsp. honey
- 1 ¼ tsp. salt divided
- ½ tsp. black pepper divided
- 4 Tbsp. olive oil divided
- 3 cups sweet potato peeled, cut into ½-inch cubes
- 2 cloves garlic crushed
- 1 head broccoli cut into bite-sized pieces

Instructions

- Saute the potatoes: In a large skillet or pot over medium heat add 3 tablespoons olive oil, sweet potatoes, ½ teaspoon salt and ¼ teaspoon pepper. Saute for 8-10 minutes, stirring occasionally, until sweet potatoes are almost cooked through.
- Add the garlic and chicken: Push sweet potatoes to the side of the skillet. Add last tablespoon of olive oil and garlic cloves. Saute for 1 minute over medium heat. Add marinated chicken and sauce to the skillet. Cook over medium heat for 5 minutes, stirring occasionally.
- Mix in the broccoli: Lastly, add broccoli on top of the chicken and sweet potatoes. Sprinkle with remaining ¼ teaspoon salt. Cover with a lid and reduce heat to Low. Simmer for 7-10 minutes, or until broccoli is cooked through.
- Serve dish immediately with chopped green onions or cilantro and enjoy!
