  • 1 lb. chicken breast cut into 1-inch cubes
  • cup BBQ sauce
  • 1 Tbsp. honey
  • 1 ¼ tsp. salt divided
  • ½ tsp. black pepper divided
  • 4 Tbsp. olive oil divided
  • 3 cups sweet potato peeled, cut into ½-inch cubes
  • 2 cloves garlic crushed
  • 1 head broccoli cut into bite-sized pieces
  • cilantro optional
  • green onions optional

Instructions

  1. Marinate the chicken: Whisk together BBQ sauce, honey, ½ teaspoon salt and ¼ teaspoon pepper in a small bowl. Pour BBQ sauce mixture over cubed chicken in a gallon-sized zip-top bag. Marinate for at least 10-15 minutes or up to overnight
  2. Saute the potatoes: In a large skillet or pot over medium heat add 3 tablespoons olive oil, sweet potatoes, ½ teaspoon salt and ¼ teaspoon pepper. Saute for 8-10 minutes, stirring occasionally, until sweet potatoes are almost cooked through.
  3. Add the garlic and chicken: Push sweet potatoes to the side of the skillet. Add last tablespoon of olive oil and garlic cloves. Saute for 1 minute over medium heat. Add marinated chicken and sauce to the skillet. Cook over medium heat for 5 minutes, stirring occasionally.
  4. Mix in the broccoli: Lastly, add broccoli on top of the chicken and sweet potatoes. Sprinkle with remaining ¼ teaspoon salt. Cover with a lid and reduce heat to Low. Simmer for 7-10 minutes, or until broccoli is cooked through.
  5. Serve dish immediately with chopped green onions or cilantro and enjoy!

  • Use Whole30 approved BBQ sauce and omit honey to follow a Whole30 diet.
  • Prep ingredients ahead by storing sweet potatoes, broccoli, and marinated chicken separately in the refrigerator for up to 3-4 days.
