BBQ Jackfruit Sandwich

The BBQ Jackfruit Sandwich features shredded unripe jackfruit simmered in a smoky chipotle BBQ sauce with sautéed onions, served on slider buns with a quick cabbage and cilantro slaw. The jackfruit mimics a pulled meat texture, absorbing the sweet, tangy, and smoky flavors of the sauce. The fresh slaw adds crunch and brightness, making this a satisfying plant-based sandwich option.

Description

This recipe starts by blending chipotle peppers, adobo sauce, ketchup, apple cider vinegar, garlic, Dijon mustard, smoked paprika, cumin, and black pepper into a smooth BBQ sauce. Unripe canned jackfruit is shredded to a pulled texture, then cooked with sliced onion and salt until softened. The BBQ sauce is added in stages during a simmer to infuse the jackfruit with smoky and tangy flavors, while keeping the filling moist.

The slaw, consisting of shredded cabbage, chopped cilantro, lime juice, olive oil, salt, and pepper, provides a crisp, fresh contrast to the rich jackfruit. The sandwiches are assembled on slider buns with the BBQ jackfruit and slaw, and additional fixings like pickles or serrano peppers can be added for extra flavor and heat.

This sandwich makes a flavorful plant-based meal that showcases the texture of jackfruit combined with a homemade smoky BBQ sauce and crunchy slaw. It works well for casual meals or gatherings, offering a vegan alternative to pulled pork sandwiches.

  • ½ teaspoon cumin ground
  • black pepper freshly ground

Jackfruit

  • 1 (20-ounce) can jackfruit drained, un-ripe
  • 1 tablespoon extra-virgin olive oil
  • 1 yellow onion thinly sliced, small
  • ¼ teaspoon salt sea salt
  • ½ cup water

Quick Slaw

  • 2 cups cabbage shredded
  • ¼ cup cilantro chopped, fresh
  • ½ tablespoon lime juice fresh
  • ½ teaspoon extra-virgin olive oil
  • salt sea salt; freshly ground black pepper
  • black pepper sea salt; freshly ground black pepper

For serving

  • 8 slider buns or 6 hamburger buns
  • Desired fixings pickles, mustard, serrano peppers, etc.

Instructions

  1. Make the BBQ sauce: In a food processor, blend the chipotle peppers, adobo sauce, ketchup, vinegar, garlic, mustard, paprika, cumin, and a few grinds of pepper until smooth. Set aside.
  2. Prepare the jackfruit by shredding the pieces with your hands, discarding any harder pieces of the core. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and salt and cook, stirring occasionally, until soft, 8 to 10 minutes, turning down the heat as necessary. Next, add the shredded jackfruit and cook 5 minutes, stirring occasionally. If necessary, add a splash of water to keep it from sticking to the pan. Stir in the ½ cup water and half the BBQ sauce. Turn the heat to low, cover, and simmer for 20 minutes. Remove the cover and stir in half of the remaining BBQ sauce, reserving the rest for serving.
  3. Make the slaw: In a medium-large bowl, combine the cabbage, cilantro, lime juice, olive oil, and pinches of salt and pepper.
  4. Serve the sliders on the buns with the jackfruit, the remaining BBQ sauce, the slaw, and desired fixings.
