Description
This BBQ Pork Belly recipe begins with a marinade combining minced garlic, crushed peppercorn, brown sugar, soy sauce, salt, and optional chili flakes to impart a sweet, salty, and slightly spicy flavor. Pork belly is sliced about three-quarters of an inch thick, coated thoroughly, and refrigerated to marinate for several hours or overnight to deepen flavor absorption.
The pork slices are then arranged on a grill rack above a catching pan and baked at 180°C. Baking on each side for 20-30 minutes while periodically basting with marinade results in tender pork with a sticky, caramelized surface. The slow roasting allows fat to render and meat to remain juicy.
This preparation is well-suited for serving as a rich main dish or in sandwiches, and it benefits from the layered flavors of the marinade. The optional chili flakes add a gentle heat but can be omitted according to taste.
Ingredients
- 4 big cloves garlic - finely minced
- 1 teaspoon peppercorn crushed
- ½ cup brown sugar
- ⅓ cup soy sauce
- 1 teaspoon salt
- 1 teaspoon chili flakes (optional)
- 2 pounds pork belly - sliced about ¾ inch thick
Instructions
- Combine all ingredients for the marinade in a big bowl and mix until sugar is dissolved.
- Dip each piece of sliced pork belly, covering all sides completely then place them in a plastic freezer bag. Seal and place in the fridge. Let it marinate for a few hours or, better, overnight.
- Arrange the marinated pork belly slices on a grill rack and place it on the middle rack of the oven with another baking pan placed below it to catch the drippings.
- Bake each side at 180°C for about 20-30 minutes while basting the meat with the remaining marinade every 10 minutes.
