BBQ Pork with Cheesy Grits
Description
This recipe starts with cooking water and seasoning to a boil before gradually whisking in yellow stone-ground grits to avoid lumps. The grits simmer steadily until tender and creamy over 20 minutes. Butter and a sharp cheddar cheese are then stirred in to enrich the texture and flavor. Meanwhile, leftover pork rib meat is chopped and simmered gently in barbecue sauce to warm through and absorb the smoky sweet sauce.
The dish layers the cheesy, creamy grits on the plate topped with the saucy barbecue pork and garnished with fresh cracked black pepper and optional parsley. The warm BBQ pork adds a tangy, savory richness to the smooth grits, balancing texture and taste.
Serving BBQ Pork with Cheesy Grits offers a filling meal with hearty protein and a creamy base, suitable for lunch or dinner. The use of leftover pork ribs makes this recipe practical for minimizing waste and extending meals.
