BBQ Pulled Chicken Sandwiches with Cole Slaw and Hawaiian Bread
Description
The BBQ Pulled Chicken Sandwiches start with bone-in, skin-on chicken thighs cooked slowly until fall-apart tender. After removing skin and bones, the chicken is shredded and mixed with a flavorful BBQ sauce to create a moist, saucy filling. The use of Hawaiian bread buns introduces a soft, subtly sweet base that is lightly toasted to add slight crunch and warmth.
The addition of cole slaw contrasts with the tender chicken, adding a fresh, crunchy texture and a mild acidity that balances the rich BBQ sauce. Serving the sandwiches warm allows flavors to meld and enhances the eating experience, making them a hearty choice for lunch or dinner.
For make-ahead preparations, adding lettuce leaves under the chicken and slaw helps prevent bun sogginess if assembled early. Buttering and grilling or toasting the buns add flavor and resilience to the sandwich structure.
Ingredients
- 8 chicken thighs , bone in, skin on
- 2 cups BBQ sauce (My go to is the Tony Roma's BBQ Sauce or if premade, Bone Suckin' Sauce)
- 6 Hawaiian bread bun
- 2 tablespoons butter , melted (optional)
- 2 cups cole slaw
- salt to taste
- black pepper to taste
Instructions
- Put salt and pepper in the bottom of your slow cooker.
- Put the thighs in, skin side up
- Season with more salt and pepper.
- Cook on low for 7 hours.
- Remove skin and bones and gently pull chicken apart with a fork.
- Mix with BBQ Sauce.
- Brush melted butter on the inside of the buns and put face down on a griddle or in a 375 degree oven for 5-7 minutes until browned.
- Top bottom of the bun with 1/2 cup of BBQ chicken mixture, then 1/3 a cup of cole slaw.
- If you are going to make these ahead of time, you can add a leaf of lettuce to the top and bottom bun before you add the chicken and cole slaw. It will help prevent sogginess from setting in.
