BBQ Soy Curls (Instant Pot, Slow Cooker)

BBQ Soy Curls use dehydrated soy curls rehydrated in vegetable broth and cooked in barbecue sauce for a savory plant-based protein dish. The soy curls absorb the flavorful liquids, then slow cooked in an Instant Pot or slow cooker to develop a tender, meaty texture. The recipe notes that pressure from the Instant Pot improves texture compared to a standard slow cooker.

Description

This recipe calls for soaking soy curls in vegetable broth, allowing them to absorb moisture and flavor. After draining excess liquid and optionally tearing the pieces smaller, the rehydrated soy curls are combined with barbecue sauce and black pepper. When cooked in the Instant Pot on the slow cook function, the steam pressure helps produce a firmer, more meat-like texture as they cook for about an hour.

Alternatively, cooking in a traditional slow cooker requires a longer cooking time and produces a softer texture. The resulting dish is suitable for meal prep, family meals, or parties, offering a flavorful, plant-based barbecue-style protein suitable for various serving styles.

The recipe yields a large batch that can be refrigerated up to five days or frozen. Reheating can be done on the stovetop or microwave. The notes also mention estimated nutrition information, which varies with chosen broth and sauce.

Ingredients

Servings
  • 8 ounces soy curls Butler brand, 1 bag
  • 3 cups vegetable broth Or use water + bouillon powder/paste, any salted variety
  • 1⅔ cups barbecue sauce Or one (16-18 fl oz) bottle of sauce
  • black pepper optional

Instructions

  1. Place soy curls in a large, shallow bowl. Add broth, stir, and let sit 10 minutes. At this point most of the broth should be absorbed. If there's more than about ¼ cup of broth left in the bottom of the bowl, stir the soy curls again and let sit for 2 to 3 minutes. Check again, and carefully drain away any excess.
  2. Optional step: If you prefer small pieces, use your hands to tear and shred some of the soy curls.
  3. Pour rehydrated soy curls into the Instant Pot insert (see NOTES below if using a standar slow cooker). Add BBQ sauce and black pepper, if using, and stir well. Lock on the lid.
  4. Press the Slow Cook button. Slow cook on high for 1 hour. Carefully remove lid, stir, and enjoy.

Notes

  • Cooking in a regular slow cooker takes about 1 hour 45 minutes on high, but results in softer soy curl texture.
  • The slight steam pressure in the Instant Pot's slow cook mode helps achieve a firmer texture.
  • Leftovers keep in the refrigerator for up to 5 days and can be frozen; thaw overnight in the fridge.
  • Reheat on the stovetop or microwave prior to serving.
  • Nutrition facts are approximate and depend on the broth and BBQ sauce used.
