Bean & Lentil Veggie Burgers

This delicious Veggie Burger has southwestern flavours, and is made with beans and lentils, then topped with chipotle mayo.

Ingredients

  • 2 tablespoon vegetable oil
  • 1 portobello mushroom chopped
  • ½ cup onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chilli powder
  • 2 teaspoon cumin
  • 19 oz red kidney beans drained, can
  • 1 cup green lentils cooked
  • ¾ cup rolled oats not instant
  • lime juice juice of one lime
  • 1 chipotle pepper
  • 1 tablespoon adobo sauce
  • 2 tablespoon cilantro or parsley, chopped, fresh
  • 1 egg beaten, large
  • 6 tablespoon mayonnaise
  • 1 tablespoon adobo sauce
  • 6 Buns I used brioche

Instructions

  1. Heat 1 tablespoon of the oil in a large pan over medium-high heat
  2. Add mushrooms, onion, and garlic, and saute until onions and mushrooms are softened, about 3 minutes
  3. Stir in chilli powder and cumin, cooking until fragrant. Remove from heat and set aside
  4. In a food processor, add beans, lentils, rolled oats, egg, lime juice, chipotle pepper, adobo sauce and cilantro
  5. Pulse in the processor until mixture is combined but still chunky. Stir in the onion mushroom mixture.
  6. Over medium high, heat a large pan with enough vegetable oil to cover pan
  7. With your hands, form 6 fairly large patties into balls, flattening between your palms.
  8. Fry patties until crisp, about 5 minutes per side.
  9. In a small bowl, stir together mayonnaise and adobo sauce to make chipotle mayo.
  10. Serve topped with chipotle mayo on buns with fixings, (avocado slices, lettuce, red onion, pickles, and salsa)

Notes

  • These patties are best when they are fried. You can bake them, but they will be drier, and won't hold together as well.
  • Calories indicated include the bun and toppings
