  • 1 onion chopped
  • 1 clove garlic minced
  • 2 carrot sliced
  • 1 rib celery sliced
  • 2 cups beef cooked
  • 6 cups beef broth reduced sodium
  • 14.5 ounces diced tomatoes with juices, 1 can, canned, petite
  • ½ green bell pepper diced
  • cup pearl barley
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon thyme dried leaves
  • 1 packet beef gravy mix
  • 1 bay leaf
  • 2 tablespoons red wine optional
  • 2 tablespoons parsley or 2 teaspoons dried, chopped, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Cook onions and garlic in oil over medium heat until softened.
  2. Add remaining ingredients and bring to a boil. Reduce heat and simmer covered about 40-50 minutes or until barley is cooked.
  3. Remove bay leaf and serve.

Notes

  • The soup will thicken as it cools; add extra broth or water to reach the preferred consistency when reheating.
