Beef Barley Soup
Description
This soup begins by browning beef cubes in cooking oil to build a deep savory base. Sautéed onions, carrots, and mushrooms are added to the pot and cooked until golden to build flavor complexity. Aromatics including pressed garlic and bay leaves provide subtle herbal and pungent undertones. Salt and pepper are added to season the broth.
Beef broth is poured into the pot and the mixture simmers gently with the lid on to tenderize the beef and blend the flavors. After the initial simmer, barley is added and cooked until tender, absorbing some broth and thickening the soup slightly. The final result is a robust soup combining tender meat, earthy mushrooms, sweet carrot, and chewy barley.
This soup can be served as a satisfying lunch or dinner, offering protein and fiber in one dish. It is best served hot and can be stored and reheated easily for subsequent meals.
