Beef Broccoli Stir Fry

Beef Broccoli Stir Fry is a savory dish combining tender beef slices and crisp-tender broccoli florets in a flavorful sauce made of soy, oyster sauce, and optional sherry. The beef is lightly coated with cornstarch to seal in juices and achieve a smooth texture. The broccoli is blanched to retain crispness and vibrant color. Garlic adds aroma to the stir-fry, and the sauce thickens slightly with cornstarch slurry, making this a satisfying, balanced main served best with steamed rice.

Description

This Beef Broccoli Stir Fry features thinly sliced beef tenderloin coated with a cornstarch mixture to help the meat stay tender and develop a slight crust when cooked. Broccoli florets are briefly blanched to soften while maintaining crunch and bright green color. The stir-fry begins by cooking the beef quickly over high heat to avoid overcooking and keep it juicy.

Garlic is then sautéed in the retained oil over medium heat to infuse flavor without burning. The addition of soy sauce, oyster sauce, and dry sherry creates a savory, mildly sweet sauce that coats the ingredients. A cornstarch slurry is incorporated to thicken the sauce, ensuring a glossy finish that clings to the beef and broccoli.

Combining beef and broccoli offers a balance of protein and vegetable in one dish, typically served immediately over hot steamed rice to absorb the flavorful sauce. The dish manages to preserve texture contrasts, with crisp broccoli and tender beef, making it a practical, filling meal.

Ingredients

Servings
  • 1 pound beef tenderloin cut into thin slices, or sirloin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon cornstarch - for coating
  • 1 pound broccoli - cut into florets
  • 2-3 tablespoons vegetable oil
  • 1 clove garlic - minced
  • 1 tablespoon soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon dry sherry - or wine (optional)
  • ¼ cup water
  • 1 teaspoon cornstarch - for sauce thickener
  • black pepper ground

Instructions

  1. In a bowl, mix together the cornstarch, salt and pepper. Add the beef slices coating each slice with the cornstarch mix.
  2. Blanch the broccoli florets in boiling water for 2-3 minutes or just until they are half cooked or tender but still crisp. Remove from water and drain.
  3. In a wok or saute pan, heat oil over high fire. Add beef slices and stir-fry for about 2-3 minutes. Do not overcook so the beef remains tender. Remove the beef from oil and set aside.
  4. In the same oil, but over medium heat, saute garlic until slightly browned. Add the soy sauce, oyster sauce, and dry wine and let it simmer.
  5. Dissolve 1 teaspoon cornstarch in ¼ cup water. Add this to the pan and stir until sauce thickens. Add the cooked broccoli florets and beef and cook for another half a minute. Transfer to a serving plate and drizzle some oyster sauce on top.
  6. Serve immediately with hot steamed rice.
