Ingredients

  • 1/4 lb roast beef thinly sliced, rare
  • 1/2 lemon (juice of)
  • 1 tbsp extra virgin olive oil
  • salt
  • black pepper
  • 1.5 cups arugula baby
  • Asiago cheese shaved, or Parmesan cheese

Instructions

  1. Whisk lemon juice, olive oil, salt and pepper.
  2. Lay the roast beef over a plate.
  3. Add half of the vinaigrette to the roast beef.
  4. Top with arugula, salt, pepper, remaining vinaigrette and shaved Asiago.
  5. Serve immediately.
