Description
This dip begins by sautéing minced garlic and chopped onion in olive oil until translucent, then browning lean ground beef and seasoning it with taco mix to infuse Mexican-inspired flavors. Refried beans and enchilada sauce are stirred in to build a thick, saucy filling, combined further with drained black beans for texture and heartiness.
The mixture is transferred to a heatproof dish and topped with shredded cheddar or Monterey Jack cheese, then baked at 350°F until the cheese melts and bubbles, creating a golden crust. Fresh chopped cilantro can be added after baking to lend a fresh herbal note. The result is a layered dip with savory beef, creamy beans, and melted cheese combining for a comforting, scoopable dish.

Ingredients
- 2 teaspoons olive oil
- 2 cloves garlic minced
- 1 onion finely chopped
- 1 pound ground beef lean
- 1 packet taco seasoning
- 1 (16 ounce each) can refried beans
- 1 (10 ounce each) can enchilada sauce
- 1 (15 ounce each) can black beans drained and rinsed
- 2 cups cheddar cheese or monterey Jack cheese, shredded
- cilantro for garnish, chopped, fresh
Instructions
- Preheat oven to 350°F.
- Heat oil over high heat in a skillet. Add garlic and onion, cook for 3 minutes until translucent.
- Add beef and cook, breaking it up as you go, until it changes from pink to light brown.
- Add taco seasoning and cook until beef is browned.
- Add refried beans and Enchilada sauce. Cook for 5 minutes or until thickens to your desired consistency. Stir through black beans.
- Transfer to a heatproof bowl.
- Top with cheese then bake for 15 minutes or until bubbly and golden.
- Serve warm with corn chips, garnished with cilantro if desired!
