Beef Enchilada Dip

Beef Enchilada Dip layers seasoned ground beef, refried beans, black beans, and enchilada sauce topped with melted cheddar cheese. The skillet-cooked beef is spiced with taco seasoning and combined with beans and sauce before baking until bubbly and golden. The dip is hearty and rich with a familiar enchilada flavor, ideal for scooping with corn chips as an appetizer or party dish.

Description

This dip begins by sautéing minced garlic and chopped onion in olive oil until translucent, then browning lean ground beef and seasoning it with taco mix to infuse Mexican-inspired flavors. Refried beans and enchilada sauce are stirred in to build a thick, saucy filling, combined further with drained black beans for texture and heartiness.

The mixture is transferred to a heatproof dish and topped with shredded cheddar or Monterey Jack cheese, then baked at 350°F until the cheese melts and bubbles, creating a golden crust. Fresh chopped cilantro can be added after baking to lend a fresh herbal note. The result is a layered dip with savory beef, creamy beans, and melted cheese combining for a comforting, scoopable dish.

Serve warm alongside corn chips for dipping. The presence of both refried and black beans adds a creamy and hearty contrast to the spiced beef, making this dip filling and flavorful for gatherings.
