  • 1 pound ground beef 97% lean
  • ½ cup white onion finely chopped
  • ½ cup green pepper finely chopped
  • cup water
  • 1 ounce taco seasoning mix 1 packet
  • 15 ounces black beans 1 can rinsed and drained, heated
  • 11 ounces tortilla chips use ¾ of a bag
  • 3 cups cheddar cheese freshly shredded
  • 1 cup cherry tomato diced
  • ¼ cup black olives sliced
  • ¼ cup cilantro finely chopped
  • 2 jalapeños sliced
  • 2 to 3 green onions sliced

Toppings:

  • 1 cup sour cream optional
  • 1 cup salsa optional

Instructions

  1. Preheat the oven to 350° F.
  2. To a large skillet over medium-high heat add the ground beef, onion, and green bell pepper. Cook beef for 5 to 8 minutes or until the juices run clear. 1 pound ground beef, ½ cup white onion, ½ cup green pepper
  3. Add the water and taco seasoning to the sauté pan. Stir for 2-3 minutes. Add the beans to the sauté pan. Mix until everything is combined. Remove the sauté pan from the heat. Set aside. ⅛ cup water, 1 ounce taco seasoning mix, 15 ounces black beans
  4. To a 9x13 baking dish or baking sheet, add half of the chips. Top with half of the beef mixture. Top the beef mixture with half of the cheese. Repeat with the remainder of the chips, beef and bean mixture, and cheese. 11 ounces tortilla chips, 3 cups cheddar cheese
  5. Bake for 5 to 7 minutes or until the cheese melts. Remove the baking dish from the oven.
  6. Top the nachos with fresh tomatoes, black olives, fresh cilantro, jalapeño slices, and green onions (or whatever your favorite toppings are).
