Beef Stew

This Beef Stew features seared beef chunks cooked with onions, garlic, root vegetables, and herbs in beef broth until fork-tender. Description

To prepare, beef stew meat is browned in avocado oil along with chopped onions and garlic, then dredged with all-purpose flour to help thicken the stew. Carrots, celery, and Yukon gold potatoes are added to the pot with beef broth and seasoning including dried oregano, parsley, bay leaf, salt, and pepper.

The stew is brought to a boil then gently simmered for over an hour until the beef and vegetables are tender. The bay leaf is removed before serving. The resulting stew has a rich broth thickened by flour coating the beef and softened vegetables that soak up the savory broth.

Serving the stew hot alongside crusty bread allows for dipping and round out this filling meal that combines protein, vegetables, and herbs in a classic slow-cooked stew.

  • 2 Tbsp avocado oil
  • 1 medium-sized yellow onion chopped
  • 2 to 2.5 lbs beef stew meat
  • 4 cloves garlic minced
  • 2 Tbsp all-purpose flour or gluten-free all-purpose flour
  • 2 large carrot chopped
  • 1 cup celery chopped
  • 2 cups potato chopped, Yukon gold variety
  • 32 ounces beef broth
  • 1 tsp oregano dried
  • 1 tsp parsley dried
  • 1 bay leaf
  • 1 tsp salt to taste, sea salt
  • ¼ tsp black pepper to taste

Instructions

  1. Heat the avocado oil in a large thick-bottomed pot (I use a large Dutch oven) over medium-high heat. Add the chopped onion and sauté, stirring occasionally, until the onion begins to soften, about 5 minutes.
  2. Scoot the onion off to the side and add in the beef stew meat. Brown the beef for a few minutes. Stir in the all-purpose flour until it appears to have been absorbed into the meat.
  3. Add in the vegetables (chopped potatoes, carrots, and celery), beef broth, dried oregano, parsley, and bay leaf. Cover the pot and bring the stew to a full boil. Reduce the heat to medium or medium-low heat and cook at a gentle boil for 1 hour and 15 minutes, or until potatoes and beef are fork tender.
  4. Season the beef stew to taste with sea salt and pepper. Remove and discard the bay leaf.
  5. Serve beef stew in large bowls with crusty bread, and enjoy!
