Description
This recipe begins by setting a disposable foil pan on a medium-low grill and adding light beer, salted butter, sliced white onions, and optionally dill pickle juice. The mixture simmers to infuse the bratwursts with flavor while cooking them gently. After 15-20 minutes of grilling the brats until golden and cooked through, the sausages are returned to the beer mixture on the grill to simmer for 30 to 40 minutes to meld flavors and keep them moist.
Optional bell peppers are lightly brushed with olive oil, seasoned, and grilled until crisp-tender, then sliced and added to the simmering beer bath. The method avoids puncturing the brats to retain juices and keeps them flavorful and juicy.
The beer brat cooking combination delivers a balanced flavor of the savory sausage infused with subtle beer notes, softened onions, and optional tang from the pickle juice. The finished dish is great served on buns or as is, often accompanied by homemade dill pickle relish.
Ingredients
- 2 packages bratwurst sausage any flavor, 19 oz each per package, Johnsonville brand
- 24 oz light beer 2 cans
- 2 onion sliced, white
- 2 tablespoons butter salted
- ¼ cup dill pickle juice optional
- 1 green bell pepper or red bell pepper, optional
Instructions
- Preheat grill to grill to medium-low.
- Place a disposable 9"x11" foil pan on the grill. Add beer, butter, onions, & pickle juice (if using). Set off to one side of the grill and allow to simmer and cook.
- Cook brats on the grill over medium heat until golden and cooked through, 15-20 minutes. *see note
- Once grilled, add the cooked Brats to the hot tub and let them simmer for at least 30-40 minutes.
- If adding bell peppers, lightly olive oil the outside of the bell peppers and season with salt and pepper. Grill until tender-crisp, slice and add to the beer along with the brats.
Notes
- Simmer brats in beer and onions for 15 minutes before grilling if desired to infuse flavor and ensure thorough cooking.
- Avoid piercing the bratwursts to keep their juices intact during cooking.
- Homemade dill pickle relish can be made by finely chopping onions and mixing with sugar, mustard, paprika, dry mustard, and seasoning as a condiment.
