  • 1 roasting chicken about 4 ½ pounds
  • ¼ cup olive oil
  • 1/3 cup chicken seasoning all-purpose
  • 12 ounce Pilsner beer half full, can

Instructions

  1. Preheat one side of your grill to medium-high heat (400° to 450°). We will cook this using the indirect heat method by placing the chicken on the side of the grill where there is no direct heat underneath.
  2. Add the whole chicken to a large bowl and thoroughly coat it inside and out with oil.
  3. Next, add about ¾ of the seasonings to the chicken and rub it in to cover it.
  4. Sprinkle the remaining ¼ of the seasoning blend in the oiled cavity and rub it in as well.
  5. Place a half-full beer in the center of a 10” cast iron skillet or sauté pan.
  6. Put the chicken on the beer by wrapping the cavity opening around it.
  7. Stand the chicken upright and then place it on the side of the grill where there is no heat directly underneath and roast for 1 hour and 15 minutes or until it is browned and reads 165° in the breast and thigh.
  8. Add optional garnishes of parsley and sliced green onions.
  9. You can serve it as is or carve the chicken and serve it.

Notes

  • Best eaten immediately after cooking to maintain juiciness and crispy skin.
  • To keep warm, cover the cooked chicken and place in a low oven temporarily.
  • Use a meat thermometer to ensure the chicken is fully cooked to 165°F internally.
