Beer Cheese

Report
Beer Cheese is a creamy cheese dip thickened with a roux, combining cheddar and Swiss cheeses melted into a smooth mixture with beer, Dijon mustard, and Worcestershire sauce. The base of butter, flour, and milk is enriched by the beer’s flavor, creating a silky sauce that pairs nicely with pretzels or chips. This dip balances sharp and tangy notes with the richness of melted cheeses for a satisfying appetizer or snack.

Description

The Beer Cheese recipe starts with a butter and flour roux mixed with garlic powder, which thickens the sauce when milk and beer are incorporated. Dijon mustard and Worcestershire sauce add depth and tang to the blend. Off the heat, shredded sharp cheddar and Swiss cheese fold into the hot mixture, melting into a rich, velvety cheese dip. The choice of beer influences the final flavor: darker beers lend bitterness while lighter beers result in milder taste.

This dip serves well with soft pretzels, chips, or vegetables, offering a creamy texture and balanced sharpness. It is great for casual gatherings or as a flavorful addition to snacks. The preparation method ensures a smooth consistency without clumps from pre-shredded cheese.

Leftovers can be stored in an airtight container in the refrigerator for up to five days. The dip thickens when chilled, so adding milk during reheating will restore its original creaminess.

Ingredients

Servings
  • ¼ cup flour
  • ¼ cup butter
  • ½ teaspoon garlic powder
  • ½ cup milk
  • 1 cup beef We used a Budweiser
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 cups cheddar cheese shredded, sharp
  • 1 cup swiss cheese shredded

Instructions

  1. Melt the butter in a saucepan over medium high heat.  Whisk in the flour and garlic powder.  Cook for 1 minute, whisking constantly.
  2. Then gradually add in the milk and beer, whisking until well combined after each addition.  Continue to cook and whisk the mixture.  Then stir in the dijon mustard and worcestershire sauce.  Continue to cook and whisk until the mixture has thickened.
  3. Remove the saucepan from the heat and whisk in both of the shredded cheeses.  Stirl until melted and smooth.
  4. Serve with soft pretzels, chips or your favorite vegetables.  Enjoy!

Notes

  • Shred your own cheese instead of using pre-shredded to maintain smooth texture.
  • Any beer variety works; darker beers yield a more bitter taste, lighter beers produce a milder flavor.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
  • Reheat gently and add milk as needed to thin the sauce back to serving consistency.
