Beer Cheese Dip
Description
This Beer Cheese Dip starts by making a roux with butter, flour, and spices including onion powder, garlic powder, cayenne pepper, and salt. Milk and beer are gradually whisked in to create a smooth, thickened sauce. Dijon mustard and Worcestershire sauce add tang and umami depth. Once the sauce is bubbly and thick, sharp cheddar and Gruyere cheeses are stirred in off heat until fully melted and smooth.
The resulting dip is rich and velvety with a balance of sharp cheese flavor and the maltiness from the beer. The spices lend subtle heat and aroma without overpowering the cheese. It’s best served warm to maintain creaminess and pairs well with crunchy vegetables, tortilla chips, or soft pretzels for dipping.
Choose bold cheeses like sharp cheddar and Gruyere for flavor depth. Shredding cheese freshly ensures smooth melting, as pre-shredded varieties may not melt evenly due to additives. The recipe allows flexibility in beer choice, where darker beers give a stronger bitter note and lighter beers a milder beer flavor. Keeping the dip warm in a fondue pot or crock pot helps to preserve texture during serving.
Ingredients
- ¼ cup butter unsalted
- ¼ cup all-purpose flour
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ⅛ teaspoon cayenne pepper
- ½ teaspoon salt
- 1 cup milk
- ⅔ cup beer
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 cups cheddar cheese 8 ounces, shredded sharp
- 1 cup gruyere cheese or Swiss cheese, 4 ounces, shredded
Instructions
- In a medium saucepan, melt butter, flour, onion powder, garlic powder, cayenne pepper, and salt over medium heat. Cook for 1 minute.
- Stir in milk and beer a bit at a time, whisking until smooth after each addition. Continue cooking over medium heat, add in mustard and Worcestershire, cooking sauce until thick and bubbly.
- Turn off the heat and add the cheddar and Gruyere cheese. Stir until melted and smooth.
- Serve warm with vegetables, tortilla chips or soft pretzels.
Notes
- Shred cheese yourself for a smoother melt; avoid pre-shredded cheese additives that can make the dip grainy.
- Use bold, flavorful cheeses such as sharp cheddar and Gruyere to deepen the taste.
- Dark beers add a pronounced bitter flavor, while lighter beers produce a more delicate beer note in the dip.
- Keep the dip warm in a fondue warmer or mini crock pot to maintain its creamy texture during serving.
- Measure cheese by weight (1 cup equals 4 oz) for accurate proportions.
