Beer Dip Recipe (No Cream Cheese)

My beer dip is an easy, cheesy 20-minute recipe made with beer, cheese, hot sauce, butter, and honey for the perfect balance of flavor.

  • 6 tbsp butter
  • 6 tbsp all-purpose flour
  • 1/2 tsp mustard powder dry
  • 1/8 tsp kosher salt
  • 1/8 tsp white pepper
  • 1/8 tsp paprika sweet
  • 1 1/2 cups milk
  • 2/3 cup light beer Corona or beer of choice
  • 8 oz cheddar cheese shredded (See Note 1, sharp
  • 1 tbsp honey
  • Tabasco sauce or hot sauce of choice

Instructions

  1. Warm the milk in a saucepan or microwave in measuring cup for 1 minute on high. Set aside.
  2. In a medium sauce pan or deep skillet melt the butter and then add the flour. Whisk the flour and butter together to avoid any lumps and simmer on low to cook the flour for 1-2 minutes. The lightest (white color) roux will be slightly puffed. Whisk in the dry mustard, salt, pepper and paprika.
  3. Gradually add the milk, beer and whisk to incorporate until a thick, smooth sauce forms on low heat. Add the cheese, whisking to incorporate. Cook several minutes on simmer, sauce will thicken. Do not overheat the cheese, or it can become grainy in texture.
  4. Stir in the honey and Tabasco and cook for 3 more minutes or until a smooth sauce forms. Sauce should be thickened and bubbly. Season to taste.
  5. Serve immediately with pretzels or snack of choice.
