  • cup coconut shredded
  • ¼ cup vegan chocolate chips
  • ½ cup oats
  • 1 teaspoon cinnamon
  • 1 Tablespoon cocoa powder optional, or cacao powder

Instructions

  1. Combine beets and dates in a food processor until chopped very small. Add all other ingredients one at a time and process until a thick 'dough' forms.
  2. Roll into 18-20 balls, coat with more coconut or dust with cacao powder (if using), and place into the freezer until hardened.

Notes

  • Half a can of cooked beets can replace one medium cooked beet if fresh beets are unavailable.
  • After rolling, coat energy balls with shredded coconut or cacao powder to enhance texture and appearance before freezing.
