Beid hamine is a tradition of Sephardic Jewish cuisine. They are long simmered eggs found in Egypt, North Africa and Spain.

Ingredients

Servings
  • 8 eggs
  • 6 yellow onion peels
  • 2 tablespoons ground coffee
  • water
  • 2 tablespoons oil

Instructions

  1. Place all the ingredients in a large saucepan. Cover them generously with water and bring to a boil over low heat.
  2. Simmer for at least 10 hours or overnight on low heat.
  3. Peel and slice.
  4. Serve as is or as a garnish for stews.
