Bell Pepper Salad with Mini Sweet Peppers
Description
The salad mixes thin rings of mini sweet peppers with quartered campari tomatoes, chopped scallions including white and green parts, fresh dill fronds, minced garlic, and roughly chopped marinated olives such as green or Kalamata. Sumac is added optionally to bring a subtle tart and citrusy note. The salad is seasoned with kosher salt and black pepper.
For dressing, lemon zest and juice are combined with extra virgin olive oil and then tossed with the salad ingredients. Allowing the salad to rest for about 20 minutes before serving helps the flavors blend and mellow. This preparation yields a crisp salad with a fresh and bright profile including herbaceous and slightly acidic elements.
Feel free to substitute campari tomatoes with other ripe, sweet tomato varieties like cherry or grape tomatoes, sliced in half. This salad is adaptable to the available ingredients and celebrates Mediterranean-inspired flavors with its olive and lemon components.
