Ingredients

  • 1 oz baby arugula bag of
  • 2 cucumber sliced, mini
  • 1 red bell pepper sliced
  • 1 avocado sliced or chopped
  • ½ cup Parmigiano-Reggiano cheese grated
  • sea salt flaky
  • black pepper cracked
  • 1-2 Tablespoons balsamic glaze
  • lemon juice from ½ lemon
  • 1 Tablespoon extra virgin olive oil

Instructions

  1. Add arugula to a large salad bowl. Add cucumbers, bell pepper, parmesan and avocado on top. Sprinkle with sea salt and pepper to taste.
  2. Drizzle lemon juice and olive oil over top. Lastly, drizzle on balsamic glaze. Toss and serve.
