Description
Berries and Cream Baked Oatmeal is prepared by combining oats, protein powder, and baking powder with egg whites, milk, maple syrup, and mixed berries. After mixing, the batter is spread into a greased baking dish. Spoonfuls of sweetened cream cheese are swirled through the mixture before baking at 375°F for 35-40 minutes, allowing the oats to cook through and the berries to release their juices. The protein powder adds subtle vanilla flavor and extra substance.
The result is a baked dish that holds together when cut, with tender oats and bursts of berry flavor accented by the creamy ribbons of cream cheese. The texture is moist but firm, with some sweetness balanced by tart berries. This oatmeal can be sliced into six servings for easy portion control.

Ingredients
- 3 cups old fashioned oats
- 2 coops protein powder vanilla
- 1 tsp baking powder
- 4 cups mixed berries frozen is fine
- 2 tbsp maple syrup
- 1 tbsp butter
- 10 tbsp egg or 2 eggs, white, liquid form
- 2 cups milk skim
- 4 oz cream cheese i used whipped, regular is fine you'll just need to melt it down, plain
- 2 tbsp sugar
- 1 tsp sucralose sweetener optional
Instructions
For the Baked Oatmeal
- Preheat your oven to 375°F.
- Measure out your berries. If you would like a sweeter end product, sprinkle a teaspoon of splenda or sugar over the top of the strawberries and allow them to macerate. It may help speed up the process if you thaw them in the microwave first.
- In a large bowl, mix together the oats, protein powder, and baking powder.
- Add in the egg whites, milk, syrup, 1 tbsp of melted butter, and most of the berries. Reserve a few to put on top.
- Spray a 13"x9" pan with oil and add the oat mixture.
- Mix together the cream cheese and sugar. You can microwave it for a bit to help it soften. Put a few spoonfuls of the cream cheese around your pan and swirl it around as best as you can.
- Bake for 35-40 minutes.
Plating
- This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces.
