Berries Baked Oatmeal Recipe

Simple and easy-baked oatmeal made with pantry staple ingredients and is perfect to serve as breakfast or dessert.

  • 2 cups milk of choice
  • 2 large egg
  • 1/2 cup pure maple syrup or honey
  • 2 tablespoons coconut oil melted
  • 1/3 cup applesauce unsweetened
  • 3 cups rolled oats or gluten-free option
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract pure
  • salt kosher salt; a pinch
  • 1 1/2 cups mixed berries fresh

Instructions

  1. Preheat the oven to 350 F.
  2. In a mixing bowl, whisk the 2 cups of milk of choice and 2 large eggs.
  3. Stir in the remaining ingredients. (1/2 cup pure maple syrup, 2 tablespoons melted coconut oil, 1/3 cup unsweetened applesauce, 3 cups rolled oats, 1 teaspoon baking powder, 1 teaspoon pure vanilla extract, a pinch of kosher salt, and 1 1/2 cups mixed fresh berries)
  4. Mix everything to combine and transfer to a 9x13 baking dish.
  5. Bake in the preheated oven for 30 minutes, or until the center is set.
  6. Allow it to cool in the dish before slicing.

Notes

  • Nutrition facts are for one slice 
  • use honey or agave in place of maple syrup.
  • I prefer that you do not use quick oats and stick with rolled/old-fashioned oats
  • you may use frozen berries instead of fresh berries.
  • swap the eggs with either 2 bananas or 2 tablespoons of flaxseed.
  • for gluten allergies, use gluten-free oats 
  • Milk: use any milk of choice.
  • Store in the fridge for up to 5 days.
