Berry and Mascarpone Crostini

Ingredients

  • 1/2 baguette
  • 1-2 tablespoons butter for brushing, softened at room temperature, unsalted, 15-30 grams
  • 8 ounces mascarpone cheese 227 grams
  • 2 tablespoons granulated sugar 30 grams
  • 1 teaspoon vanilla bean paste or vanilla extract
  • Pinch salt
  • 6 ounces strawberries cut into bite size pieces, fresh, 170 grams
  • 4 ounces blueberries fresh, 113 grams
  • honey for drizzling
  • mint leaf for garnish, fresh

Instructions

  1. Place the oven rack in the top third of the oven. Turn the broiler on low.
  2. Cut the baguette into 1/2 inch (1.25 centimeters) thick slices.
  3. Place the slices in a single layer on a large baking sheet. Brush the tops with the softened butter.
  4. Broil just until the tops are toasted, about 1-2 minutes. Set aside and allow to cool completely to room temperature.
  5. In a medium bowl, fold together the mascarpone, sugar, vanilla paste, and salt until well blended.
  6. Once the toasted bread is cooled, spread the mascarpone over the top of each slice.
  7. Top with berries, then drizzle with honey and garnish with mint leaves.
  8. Serve immediately.
