Description
This Berry Baked Oatmeal recipe features old-fashioned rolled oats combined with baking powder and salt, layered with fresh mixed berries such as strawberries, blueberries, and raspberries. A wet mixture of beaten eggs, almond milk, pure maple syrup, vanilla extract, and melted butter is whisked together and poured over the layered oats and berries, allowing the grains to absorb moisture throughout baking.
Baking the dish uncovered at 350°F until set yields a moist, tender oatmeal with a soft texture and a balanced sweetness from the maple syrup and vanilla. The fresh berries add bursts of flavor and color throughout the oatmeal.

Ingredients
- 3 c. rolled oats old fashioned
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 egg lightly beaten
- 2 1/2 c. almond milk plus additional for serving, unsweetened vanilla
- 1/2 c. pure maple syrup
- 2 tsp vanilla extract pure
- 3 Tbsp unsalted butter melted, or coconut oil
- 3 c. fresh berries larger berries chopped or sliced (I used strawberries, blueberries and raspberries)
Instructions
- Preheat oven to 350°F. Grease a 2 ½ or 3 quart baking dish. Set aside.
- Combine oats, baking powder and salt. Place half the oat mixture in the baking dish, top with half the berries, and then top with the remaining oat mixture.
- Whisk the eggs, almond milk, maple syrup, vanilla, and melted butter/coconut oil. Pour over the oats.Top the oats with the remaining berries. Gently shake the baking dish back and forth from side to side to allow the wet mixture to get down into the oats.
- Bake uncovered for about 25-40 minutes, until oats are tender, and the mixture is set.
- Serve immediately with a splash of milk, or cool, then cover and refrigerate to reheat later.
