Berry Cheesecake Salad
Description
To make Berry Cheesecake Salad, soften cream cheese is beaten smooth before incorporating powdered sugar, vanilla, and heavy cream or milk. Whipped topping is gently folded into this mixture, creating a fluffy, cheesecake-flavored dressing. Fresh berries, including quartered strawberries and other mixed varieties, are folded into the creamy dressing, allowing the berries to be lightly coated without breaking down.
The salad balances the tartness of berries with the mild sweetness and richness of the cheesecake dressing. The texture remains primarily that of fresh berries enveloped in a smooth and creamy sauce. Garnishing with extra berries and fresh mint sprigs adds brightness and visual contrast.
This salad functions well as a light dessert or fruit side dish, especially during berry seasons. It can be prepared several hours in advance to allow flavors to meld without the berries losing their texture and freshness.
Frozen berries are not recommended since they release excess liquid and become soft. Fresh whipped cream may be substituted for the whipped topping based on preference.
Ingredients
- 6 cups mixed berries cut strawberries into quarters
- 8 ounces cream cheese softened
- 1/2 cup powdered sugar 2 tablespoons
- 1/2 teaspoon vanilla extract
- 1/4 cup heavy cream or milk
- 8 ounces whipped topping thawed
- berries additional for garnish, sprigs for mint
- mint additional for garnish, sprigs for mint
Instructions
- Place the cream cheese in a medium bowl and beat with a mixer until completely smooth.
- Add the powdered sugar, and beat until combined. Add the vanilla and cream and continue to beat until smooth.
- Gently fold the whipped topping into the cream cheese mixture.
- Place the berries in a large bowl and pour the cheesecake mixture over the top. Stir gently until berries are coated in the cheesecake.
- Garnish with berries and mint sprigs and serve.
Notes
- Do not use frozen berries as they tend to become too soft and watery for this salad.
- You may substitute fresh whipped cream instead of whipped topping if preferred.
- Prepare the salad up to 8 hours ahead to allow flavors to combine while keeping berry texture intact.
