Description
The Berry Coffee Cake features a batter made from flour, sugar, baking powder, baking soda, butter, eggs, buttermilk, and vanilla. Half of the batter is spread into a baking pan then topped with a generous drizzle or spread of berry sauce. Remaining batter is dolloped over the sauce in mounds. Baking at 350°F for 30 to 40 minutes sets the batter into a soft cake with a light golden hue and tender crumb.

Ingredients
- berry sauce
- 3 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup butter 1 stick
- 2 egg lightly beaten
- 1 cup buttermilk
- vanilla extract 1 teaspoon
Instructions
- Preheat oven to 350 degrees.
- In a large bowl whisk together flour, sugar baking powder and baking soda. Cut in butter until mixture resembles small pebbles. Form a well in the center of the mixture and set aside.
- In a small bow, whisk together eggs, buttermilk and vanilla. Pour liquid egg mixture into the center of the flour mixture. Stir until moistened (batter will be lumpy - let it be!). Put half of the batter into an ungreased 9 x 11 inch baking pan. Drizzle (spread if you would like) berry sauce over batter. Put remaining batter into mounds over the berry sauce. Bake for 30-40 minutes or until lightly golden on top.
