Berry Fluff Jello Salad
Description
This salad blends dry red gelatin powder with cottage cheese to create a lightly flavored, smooth base. Whipped topping is folded in to add lightness and creaminess. Miniature marshmallows increase the softness and add sweetness. Fresh strawberries, blackberries, raspberries, and blueberries provide fresh, juicy contrast both in flavor and texture.
The ingredients are combined gently to preserve berry shape, then chilled for at least two hours to allow the gelatin to set and the flavors to meld. The result is a fluffy, slightly sweet and fruity salad that can be sliced or spooned into bowls.
Best served cold, this salad can also be frozen and served frozen in squares for a different texture experience. When mixing, using a hand mixer to slightly smooth the cottage cheese is an option if a less textured result is preferred. Fresh berries provide the fullest flavor, but any fresh berry combination totaling about four cups works well.
Ingredients
- 2 cups cottage cheese
- 3 ounces red gelatin dessert 1 box, strawberry, raspberry, or cherry
- 8 ounces whipped topping
- 2 cups miniature marshmallows
- 2 cups strawberries washed & cut
- ¾ cup blackberry washed
- ¾ cup raspberry washed
- ¾ cup blueberries washed
Instructions
- Combine cottage cheese and dry Jell-O powder in a bowl.
- Fold in whipped topping.
- Gently fold in all remaining ingredients. Refrigerate at least 2 hours before serving.
Notes
- Any fresh berries totaling about 4 cups can be used to customize the salad.
- Mixing cottage cheese with gelatin powder using a hand mixer creates a smoother texture, but stirring by hand keeps more texture.
