Berry Salad with Almond-Cranberry Crusted Goat Cheese
Description
Berry Salad with Almond-Cranberry Crusted Goat Cheese combines leafy greens with sweet strawberries and chewy craisins coated on creamy goat cheese balls. The cheese is rolled into small portions, crusted in a chopped almond and craisin mix, and chilled until serving. The dressing is a vinaigrette blending olive oil, cider vinegar, red wine vinegar, honey, and shallot, which offers a subtle sharpness and sweetness to the berries and greens. As a result, this salad has contrasting crunchy, creamy, and juicy elements that create a balanced flavor and texture profile.
The method involves mixing the cheese with the nut-fruit crust and refrigerating it while preparing a bright dressing to toss with the greens and strawberries. This approach keeps the cheese firm and flavorful. The salad can be served plated on individual dishes or tossed in one large bowl, suited for casual or more formal settings.
