Berry salad with red onions, arugula, nuts and pomegranate arils

This berry salad is infinitely variable. The trifecta at its base involves greens, berries and nuts - everything is changeable, and nothing is sacred. The dressing here is tangy but delicate; feel free to increase the vinegar if you want something with more bite.

Ingredients

  • 1 arugula or another green mix of your choice, package
  • 1 blackberries or other berries of your choice, package
  • ½ onion sliced
  • pomegranate arils from half a pomegranate
  • ¼ cup nut chopped and toasted - pistachios, almonds or peanuts are my favourites, of your choice
  • 4 TBs olive oil
  • 2 TBs white wine vinegar or raspberry vinegar
  • 1 teaspoon honey
  • 1 teaspoon mustard
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine olive oil, vinegar, honey, mustard, salt and pepper in a jar, and shake until well combined.
  2. In a large bowl, layer remaining salad ingredients. Drizzle with dressing, and mix well to combine. Serve immediately.
