Berry Yogurt Bark
Description
Berry Yogurt Bark uses Greek yogurt mixed with honey for a smooth, slightly sweet base that freezes solid on a lined baking sheet. Small mounds of melted bittersweet chocolate are swirled into the yogurt to add a rich cocoa component. Fresh strawberries, blueberries, and raspberries along with chopped pecans are scattered over the top to add bright, fruity bursts and crunchy texture. Once frozen, the bark is broken into irregular pieces for serving, combining creamy frozen yogurt with the contrasting crunch of nuts and fresh berries.
The freezing step is essential to achieve the bark texture, making it easy to hold and snack on. The bittersweet chocolate provides richness without overpowering the natural tartness of the yogurt and berries. This combination balances sweet, tart, creamy, and crunchy, offering a pleasant variety in every bite.
Store the broken bark pieces in an airtight container in the freezer for up to two months. Remove a few pieces at a time to enjoy a chilled, refreshing snack. If kept in the refrigerator instead of the freezer, the yogurt softens back to a spreadable consistency but remains tasty with the fruit and nut mixture.
Ingredients
- 26 ounce Greek yogurt
- ¼ cup honey
- ¾ cup bittersweet chocolate
- ½ cup pecans chopped
- 2 strawberries sliced
- ¼ cup blueberries
- ¼ cup raspberry
Instructions
- Place the chocolate chips in a microwave safe bowl and heat for 30 second intervals, stirring in between until smooth.
- In a large mixing bowl mix the Greek yogurt with honey.
- Line a baking sheet with parchment paper or a silpat.
- Spread the yogurt mixture evenly over the entire baking sheet.
- Dot the chocolate in little mounds all over the bark. Use toothpicks to swirl the chocolate.
- Top with berries all over then with pecans.
- Freeze for 2 hours. Break the bark into pieces and serve. Store in airtight container in the freezer up to 2 months.
Notes
- Store the bark pieces in an airtight container in the freezer to keep them fresh for up to two months.
- After breaking the bark into pieces, store immediately to prevent them from freezing together.
- Thawing in the refrigerator softens the bark back to a yogurt texture but still tastes good.
- Remove only a few pieces at a time to keep the rest properly frozen.
