Best Banana Bread

This banana bread recipe uses ripe mashed bananas combined with both granulated and brown sugars, flour, baking soda, cinnamon, and eggs to create a moist, flavorful quick bread. Melted butter or oil and vanilla extract enrich the batter, while chocolate chips or chopped nuts add texture and bursts of sweetness. The bread bakes until golden and a toothpick inserted in the center comes out clean, yielding a soft crumb with pleasant hints of cinnamon and banana.

Description

Best Banana Bread starts with rinsing and combining dry ingredients, including all-purpose flour, sugars, baking soda, salt, and cinnamon, to provide structure and leavening. In a separate bowl, ripe bananas are thoroughly mashed and mixed with lightly beaten eggs, melted and cooled unsalted butter or oil, and pure vanilla extract to add moisture and flavor. The wet ingredients are carefully folded into the dry, just until combined, preserving the batter's lightness. Chocolate chips or chopped nuts are folded in for added texture.

The batter is poured into a greased and parchment-lined loaf pan to aid removal and even baking. It bakes at 350°F (175°C) for 55 to 60 minutes until a toothpick comes out clean and the top is golden. Cooling on a wire rack after a brief rest in the pan ensures proper set and sliceability. The finished bread is moist with a balance of sweetness and spice, complemented by chocolate or nuts.

This banana bread is versatile enough to serve warm or at room temperature, suitable for snacks, breakfast, or dessert. The note about mixing both nuts and chocolate chips suggests personalizing by combining preferred inclusions.

Ingredients

Servings
  • 1 ¾ cups all-purpose flour
  • ¾ cup sugar granulated white
  • ¼ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 medium banana about 1 pound or 500g, ripe
  • 2 egg large, lightly beaten
  • ½ cup butter melted and cooled, or cooking oil, unsalted
  • 2 teaspoons vanilla extract pure
  • 1 cup chocolate chips or roughly chopped nuts of your choice

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9 x 5 x 3 inch loaf pan and line with parchment (baking) paper. Set aside.
  2. In a large bowl whisk together the flour, sugars, baking soda, salt and cinnamon. Set aside.
  3. In a separate medium-sized bowl mash the bananas really well. Then add the eggs, cooled melted butter (or oil), and vanilla.
  4. Using a wooden spoon or spatula lightly fold the wet ingredients into the dry ingredients until just combined. Gently fold in half of the chocolate chips (or nuts if using). The batter should be thick and lumpy. (Do not over mix!)
  5. Pour the batter into prepared pan and top with remaining chocolate chips or nuts. Bake for 55-60 minutes, or until bread is golden brown and a toothpick inserted in the centre comes out clean.
  6. After about a half an hour, turn out onto a wire rack to cool. Serve warm or at room temperature.

Notes

  • You can combine both nuts and chocolate chips for varied texture and flavor.
  • Line the pan with parchment to prevent sticking and make removal easier.
  • Do not overmix batter to maintain a thick, lumpy texture for a tender crumb.
  • Check doneness by inserting a toothpick; it should come out clean when fully baked.
