Description
This meatloaf recipe uses ground beef blended with oats and milk as binders, along with onion, Worcestershire sauce, and seasonings for depth of flavor. The mixture is formed into a 9x5 inch loaf and partially coated with a ketchup-based glaze that includes brown sugar and cider vinegar for tang and sweetness.
Baked in a foil-lined wire rack set on a baking sheet, the meatloaf cooks evenly and the glaze caramelizes onto the surface, producing a slightly crisp, flavorful crust. The loaf is baked in two stages, glazing once at the start and again about halfway through baking for layered flavor.

Ingredients
Glaze:
- 1 cup ketchup
- ¼ cup brown sugar
- 2 teaspoons cider vinegar
Meatloaf:
- 2 pounds ground beef lean
- 2 egg lightly beaten
- ½ cup oats quick cooking
- ⅓ cup milk
- ⅓ cup ketchup
- ⅓ cup onion finely chopped
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 350ºF. Place a wire rack inside a large baking sheet. Cover wire rack with a piece of aluminum foil. Set aside.
- In a small bowl mix together glaze ingredients and set aside.
- In a large bowl mix all of the meatloaf ingredients until well combined. Place mixed meatloaf on a prepared baking sheet and shape into a 9X5 inch loaf. Spread half of the glaze all over the top and sides of meatloaf.
- Bake for 30 minutes. Spreading remaining glaze over the top and sides of meatloaf. Bake for 35 - 45 minutes longer, or until thermometer registers 160ºF. Let meatloaf rest 15 minutes before slicing and serving.
