Description

This meatloaf recipe uses ground beef blended with oats and milk as binders, along with onion, Worcestershire sauce, and seasonings for depth of flavor. The mixture is formed into a 9x5 inch loaf and partially coated with a ketchup-based glaze that includes brown sugar and cider vinegar for tang and sweetness.

Baked in a foil-lined wire rack set on a baking sheet, the meatloaf cooks evenly and the glaze caramelizes onto the surface, producing a slightly crisp, flavorful crust. The loaf is baked in two stages, glazing once at the start and again about halfway through baking for layered flavor.

Glaze:

  • 1 cup ketchup
  • ¼ cup brown sugar
  • 2 teaspoons cider vinegar

Meatloaf:

  • 2 pounds ground beef lean
  • 2 egg lightly beaten
  • ½ cup oats quick cooking
  • cup milk
  • cup ketchup
  • cup onion finely chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 350ºF. Place a wire rack inside a large baking sheet. Cover wire rack with a piece of aluminum foil. Set aside.
  2. In a small bowl mix together glaze ingredients and set aside.
  3. In a large bowl mix all of the meatloaf ingredients until well combined. Place mixed meatloaf on a prepared baking sheet and shape into a 9X5 inch loaf. Spread half of the glaze all over the top and sides of meatloaf. 
  4. Bake for 30 minutes. Spreading remaining glaze over the top and sides of meatloaf. Bake for 35 - 45 minutes longer, or until thermometer registers 160ºF. Let meatloaf rest 15 minutes before slicing and serving.
