BEST Corn Relish
Description
BEST Corn Relish starts with fresh yellow corn cut from the cob, combined with finely chopped red and green bell peppers, celery, and onion, creating a colorful vegetable base. These ingredients are simmered together in a pickling liquid composed mainly of apple cider vinegar and sugar, seasoned with ground mustard and whole allspice berries for subtle spice and depth. The cooking period develops tenderness while preserving a slight crunch in the vegetables.
The final product balances sweetness from the sugar and fresh corn with the acidity of vinegar, providing a bright and tangy flavor profile. Jarred in hot sterilized containers and processed in a water bath, the relish becomes shelf-stable and improves in flavor after a couple of weeks of storage.
This relish is versatile as a topping for meats and sandwiches or served alongside grilled dishes. Its long shelf life and preservation method make it convenient to prepare in advance and keep on hand throughout the year.
